Bar Protocol Steps

What to check and who to call when something behind the bar isn't working right - walk-in temps, gas, ice, POS, and more.

Walk-in Temperature Issues
  1. Check the thermometer outside the walk-in and the one next to the fans inside - both should read at 38°, give or take a degree or two.
  2. Make sure the fans are on.
  3. Check the glycol unit in the boiler room: top temp (should be in the low 30s), two blue units (should both be in the low 40s), fans on for the bottom compressor.
  4. Check that the actual compressor is turned on - the switch is up on the big grey utility box to the right of the machine. If it's on and the fans still aren't moving, check the back of the compressor for dirt (Luis cleans this monthly to prevent this).
  5. If all of that checks out, call Lewis - contact James or Emily to reach him.
Glycol Unit Overheating

If the main glycol temp reads 55 or higher, it's overheating. Unplug it from the wall immediately, contact James and Emily, and log it in the daily almanac so the right people can be called in.

Low Carbonation in MB

Check the two big CO2 tanks in the liquor basement. Middle = low on gas, top/green = full, bottom/red = empty. Emily or James checks this every Tuesday.

No Nitro

The N2 air compressor is in the front liquor basement (metal box on the back wall by the stairs). Turn the main dial to open, and make sure the white switch on the gas line is parallel to the tank, same as the yard bar gas setup.

CO2 Tank for Yard Bar
  1. Open the gas flow and make sure the red valve under the gauge is parallel to the line.
  2. Left gauge should read 800-1000 (full). At 600, order more. In the red = empty - notify James or Emily.
  3. Top PSI gauge should read 18-22 PSI.
  4. If swapping to the backup tank: turn off gas, turn the red valve perpendicular, push the grey gas valve in, then use the bar wrench (lives in the Brewery tool bag - put it back) to loosen the hex nut and switch tanks.
  5. Reverse the steps to turn everything back on, then check for leaks at the hex nut with soapy water in a spray bottle - bubbles mean a leak. If there's a leak, turn off and have James contact Liberty for a new tank.
  6. Back bar PSI should read 15-20.
Ice Machine

If it's not producing, contact Lewis immediately (his number is in the Server/MOD Bible). Don't tinker with anything beyond cleaning the filters regularly.

Red Light by the Brewery Door

Once it's on during service with no one from the Brewery around, call and text Matt Levy right away. If you can't reach him, call Emily next.

Serving Tank Pouring Foamy Beer

Only the Brewery team, James, or Emily can change the arm on the tanks. If a tank reads below 2 BBLs, 86 it and note the level in the almanac so the Brewery team can adjust or rack it out.

Lowboys Behind Bar Not Working

Check the on/off button on the front. If that doesn't help, pull it out and check the plug - it usually needs to be reset from the outlet.

Reefer

If you don't hear the engine cycle every 15-20 minutes, check that both switches on the back motor are on.

Kegerator

Should read about 38° on the digital thermometer. If beer isn't pouring: check the gas is on, and check that all three red valves inside the kegerator are parallel to the gas line (open).

Sprinklers

If there is a fire, exit the building. This section is only for a false alarm with no fire but heavy smoke.

  1. Go downstairs - the red box at the bottom of the stairs holds the key to drain the system.
  2. Prop up the drain below your feet so the basement doesn't flood while draining.
  3. Unlock the first chained valve. Turn the dial off slowly until fully open (Step 1).
  4. Turn the pipe valve to the left of that dial slowly until parallel with the pipe (Step 2).

Do these in order - doing Step 2 before Step 1 will flood the place. If sprinklers are still going, repeat with the second and third valves. Put the key back, then call Emily or Anna immediately.

POS (BC) Issues

If BC goes down and it's not an internet issue, use one computer only to ring in and swipe cards until it's back online.

If printers stop printing: check it's powered on and cords are seated, unplug and replug after 30 seconds, restart the whole POS, then go to Device Center > Printers and check for a green check next to the printer name. If it can't find an IP address, call BC directly. If the outside bar POS isn't working, check the router (blue box on the top liquor shelf) - it should be flashing green.
