Draft Line Cleaning
Full procedure for cleaning draft beer lines, from setup through final rinse and reassembly.
What You'll Need
- Cleaning keg
- Pump (with extension cord)
- 2 red pump hoses
- 4 clear faucet hoses
- Manifold
- Cleaning solution (blue = caustic, red = acid)
- Draft wrench
- Goggles, gloves, jumpsuit/overalls
Preparation
- Turn off the main gas control in the keg cooler (it's the switch furthest left; off is horizontal, on is vertical).
- Pick a serving tank trunk to run water through, based on availability or brewer preference. With the water off, remove the sprayer attachment from the yellow brewery hose, set the sprayer aside, and attach the hose to the trunk line.
- In the keg cooler, attach the single-hose end of the manifold to the serving tank line matching the trunk the water hose is attached to.
- Make sure each line being cleaned is set to pour from kegs, not serving tanks - the valve on the left should be horizontal, the valve on the right should be vertical, and fob dials should point up to the red area. Also confirm the lines are open at the valves toward the ceiling (the valve furthest right on each line being cleaned should be vertical).
Keep track of any lines switched from serving tank to keg - you'll need to switch them back afterward.
Step One: Rinse
- In the keg cooler, attach the remaining four manifold lines to the beer lines being cleaned.
- Empty the beer remaining in the faucet into a pitcher and dump it down the drain.
- Remove the faucets on the lines you're cleaning using the keg wrench (threading runs opposite - turn clockwise to loosen, counterclockwise to tighten).
- Remove the first row of beer glasses from the shelf to avoid breakage, and screw the clear hoses into the faucet sockets.
- Turn on the water to the yellow brewery hose. Watch the clear hoses - foam and leftover beer should come out first, followed by clear water. If a line has a corresponding cafe line pouring the same beer, run that line down the drain until it pours clean water too.
- Once water is flowing clear, place the clear hose ends into the cleaning keg and let it fill to the line near the top. Remove the hoses from the keg and turn off the water.
Step Two: Wash
- Pour the full bottle of caustic (base) beer line cleaner into the water in the cleaning keg. Always use blue caustic first on the first cycle.
- Remove the yellow brewery hose from the trunk line and attach the corresponding pump hose to the trunk; place the other pump hose into the cleaning solution.
- Turn on the pump and set the red dial to 20 psi.
- Watch the line hoses - solution should come through the clear hoses along with whatever has built up in the line. Once it's pouring clear blue (or pink for acid), place the line hose ends back into the keg.
- For any corresponding cafe lines, pour through into a pitcher until the solution runs clear blue (or pink), dumping the dirty solution down the drain. Once clear, fill two pitchers of solution, carry them downstairs, and pour back into the keg - repeat at least twice.
- Let the cycle run for 15 minutes, then turn off the pump, remove the pump hose and clear hoses from the keg, and detach the pump hose from the trunk line.
Step Three: Rinse Again
- Attach the yellow brewery hose to the trunk line and turn on the water.
- While water runs through the cleaning hoses, open any cafe lines that were cleaned to run water through them too.
- After 5 minutes, check the water - solution-tainted water feels oily/slick, clean water doesn't. You can also use the pH testing strips behind the bar (clean water reads pH 6.5-7.5).
- Once the line runs clean water, turn off the hose and move to the next set of four lines, repeating preparation and wash.
Acid Cleaning (Optional Second Pass)
- After the caustic wash and rinse, you can run an acid wash for a more thorough clean. First, make sure there's no caustic left in the line or pump - rinse the cleaning keg, fill with about a gallon of clean water, and run it through the pump to the floor grate.
- Run the wash and rinse cycle again with acid solution, using seven capfuls of acid instead of caustic.
Never mix acid and caustic - it causes a chemical reaction that neutralizes the cleaner's effectiveness and can damage the tap system.
Finishing Up
- After the final wash and rinse, confirm the water is off, remove the cleaning hoses, and replace the faucets.
- In the keg cooler, remove and put away the manifold, and reattach any kegs that were removed for cleaning. Reset any lines that were temporarily switched from serving tank to keg.
- Turn the main gas back on.
- Pour beer through every cleaned line, including cafe lines - about two pitchers per line.
- Wipe down the stainless steel on the main bar faucet array, with extra attention to the faucet stems. If iodine spray is available behind the bar, use it to discourage mold growth.
- Put away all tools and equipment - reattach the sprayer to the brewery hose and recoil it in the brewery next to the door.
If something goes wrong
If you're not sure a line is fully rinsed of chemical, don't pour beer through it yet - repeat the rinse step until you're sure.
